Needing parts for 1976 V-20

New to forum and this boat, and I am looking for any parts that will help in my restoration of this "new" boat to me. I am wanting to keep it all close as possible to original.

Boat is: 1976 bi-centenial issue, V-20 red, white and blue striped with 135 Chrysler manual tilt OB. all original and in great shape.

My needs are:

Newer steering wheel.
Cables for engine (I have found a teleflex steering cable already).
Vinyl (blue) material covering plywood that is covering 20-gal alum gas tanks. (plywood needed also, but can refurb.
Original passenger bench seat.
Newer engine cowling (or I will paint).
Prop for this motor application (mine damaged bad).
Newer gas tanks (I have not yet pressure tested)
Teak centerline fishbox hatch cover.
New fuel lines (have old valve).
Battery box and marine batteries (should I have a spare on board?)
any electronics, as this boat only had a fuel gauge and not on cutout on dash/helm black cover.

I think I have to trash and seal off direct dump original head? I have to figure out how to seal or remove thru hull outlet.

Anything else that would compliment the boat. I am excited to use this boat soon. I live at the Va Beach oceanfront and will launch at Owls Creek and fish Rudee Inlet area. I found out you should not make any wake all the way to inlet, so I guess I won't care much about speed, trim tabs, or fuel efficiency if I can get this original engine running again.

I'd leave the head the way it is personally. To me there's no sense in opening up a hole in your hull that you then have to fill before doing other more important projects. A lot of the things on your list aren't hard, just plug away at them one at a time. I've found it's better to wait until you've found the new part and you're sure it fits and is what you want before removing the old. Old parts on boats have a tendency to fall apart or not go back the way they were once removed. Just don't open more than 1-2 cans of worms at a time. Lots of good helpful people here to help you with whatever project you are trying to tackle.
 
Just some of the stuff I did. Might not be correct or look purdy but it suits me.
Replaced the plastic wheel with a Destroyer type.
Replaced fish box covers with Starboard.
I sealed holes to the head fittings only because they were starting to crack.

might be wrong, but i think the heads that dump overboard are illegal now. or at least within 7-9 miles of the beach.
