Grilled Deer T-Loin

-2 venison t-loins or "backstraps" as we call em down here ;)
-Moores, Dales or your favorite marinade
-Vinegar
-Conecuh sausage/banana pepers or jalapenos (your choice)
-Pack of bacon
-Grill



Beat your meat with a good tenderizin hammer first!  :D Cut straps lenthwise almost all the way through, stuff with jalapenos, banana peppers, conecuh sausage, or whatever you like. I like banna peppers and connecuh. Then wrap tightly in bacon slices, soak overnight in marinade. My preference here is about 1/3 vinegar 2/3 Moores Marinade till loins are covered. Throw on a hot grill to sear it at first, then cool down to a medium heat and cook slowly til done. I have made many deer eating converts out of this one.  8)

Wow that does look like the way to do it! "Backstrap" must be universal t-loin lingo - we call it that too.

Well, after this I'm thinking I might lay down a few nannies (does) this year. ;D
 
Already been doin it....bow season opens next weekend (14th) here. Im goin up to do some more planting and such this weekend, but I got a couple spots ready for opening day. ;)


Gonna hopefully get in a little more scouting Fri-Sat if I can get off the tractor and planting. ::)

What is "conecuh" sausage? Never heard of it and I eat alot!
 
Morris Tuten in Ridgeland (if he is still alive)processes whole hogs but I don't know what else he does.
Every year we order at least one half of a 200lb hog, split down the backbone with head and hair removed to do a inground pit cooked BBQ.

I buy it at any local grocery store here....its a name brand as well. :-/



but yeah bow season starts here on Oct. 15th. Im looking forward to some fresh straps. Gonna go plant and get things in order this weekend. 8)
