I got from a friend and made today for the first time, This came out awesome!!
Can also use Turkey Thighs!
Can change whatever you want there is no wrong way! One pot cooking!!
4 Turkey or 6 chicken thighs, with skin and bone.(if can salt the night before)
2 tablespoons olive oil
Take meat out, and let stand 1/2 hour to get the chill out. Put in a Dutch oven or what have you, brown the meat meat well on both sides, about 5 min each side.
Take out of pot and put to the side.
DO NOT CLEAN POT!! use the oil and stuck bits in the next part!
Now 2 cups onion, I use red. Sliced, not to thick. pinch Salt Cook about 2 min, then add 2 cups Carrots, largely chopped
4 cloves Garlic, give them a smash to let the flavor out. and a sliced jalapeno and cook about 3 min
Pour in 1 1/2 cup dry white wine, scraping the bottom to get them nice stuck on bits, cook about 5 min to reduce the wine by 1/2.
Add 12 oz can of crushed tomatoes, 2 pounds peeled and chopped potatoes, and 2 bay leaves, bring to simmer, add salt to taste and 2 pounds chopped Kale, cover and cook 5 min, now remove cover and stir. (add some water if to dry, just enough to almost cover veggies)
Put the turkey or Chicken on top and cover put in oven at 375 for 40 min or till meat is cooked.
My wife can not do heat so I left out the Jalapeno and added crushed red pepper in mine.
I never cook with wine, and the indian girl at the liquor was no help!! So I just grabbed a $7 bottle of white wine, was it dry, who knows?? But it was good!
Try it !! Comes out F$%# Great!!!
